The lentil cakes:
- 1 cup red lentils
- 2 ½ cups water
- 5 garlic cloves, divided
- 1 tsp olive oil
- 1 medium onion, finely chopped
- 1½ tsp curry powder
- ½ tsp paprika
- 1 cup cooked brown rice
- ½ tsp salt
- ½ tsp ground pepper
- ½ cup whole wheat panko breadcrumbs
- Juice of ½ lemon
- 3 tbsp cilantro
- 2 large roasted red peppers (4 halves), roughly chopped (see How to: Roast a Bell Pepper)
- ¾ tsp olive oil
- ¼ yellow onion, chopped
- 2 garlic cloves, minced
- 3 tbsp vegetable broth
- ½ tsp paprika
- ¼ tsp curry powder
- Dash of salt and pepper, to taste
