Ingredients:
- 2 tsp olive oil, divided
- 1 lb. Brussels sprouts, outer leaves removed, cut in half through the root
- ½ yellow onion, chopped
- 1 tbsp minced ginger
- 2 cloves, garlic, minced
- 2 tbsp curry paste
- ¾ cup + 2 tbsp vegetable broth
- ½ cup light coconut milk
- 2 tbsp minced cilantro
- Salt and pepper, to taste
