Ingredients:

The pork:
  • ¼ cup lemon juice
  • 3 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 ½ tsp dried crushed rosemary
  • ½ tsp salt
  • ½ tsp ground pepper
  • 2 garlic cloves, smashed
  • 1 (1 lb.) pork tenderloin, trimmed
The vegetables:
  • 1 (10 oz.) zucchini, cut into ¼-inch strips lengthwise
  • 8 oz. cherry tomatoes
  • 2 tsp olive oil, divided
  • ¼ tsp salt, divided
The hummus:
  • 4 oz. broccoli florets (about 2 cups)
  • 1 (14 oz.) can reduced-salt chickpeas, drained & rinsed
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 tablespoons water, plus more if needed
  • ⅛ tsp salt
  • 4 oz. Sargento Chef Blends 4 State Cheddar
  • Pita bread, for serving
