Moroccan Meatball Couscous Soup

Ingredients:

Meatballs:
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon curry powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon turmeric
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon nutmeg
  • ¼ teaspoon chili powder
  • salt and pepper to taste
  • 2 tablespoons tomato paste
  • 1.5 lb. ground lamb or beef
Soup:
  • 8 oz Israeli (pearl) couscous
  • 3 tablespoons olive oil + 2 teaspoons
  • 3 shallots, minced
  • 8 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 3¾ cups water
  • Chopped mint or parsley, for serving
