Chimichurri Chicken Lentil Soup



Chimichurri Chicken Lentil Soup

Ingredients:

For the Chicken Lentil Soup:
  • 1 1/2 pounds boneless skinless chicken breast
  • 1 pound dried brown lentils
  • 1 large onion, peeled and chopped (about 2 cups)
  • 1 1/2 cups sliced carrots
  • 1 1/2 cups chopped red bell pepper
  • 3 cloves garlic, peeled and minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh chopped rosemary (1 teaspoon dried rosemary)
  • 9 cups chicken broth
  • Salt and pepper
For the Chimichurri:
  • 1 punch fresh parsley, stems removed
  • 1 garlic clove
  • 5 tablespoons olive oil
  • 2 tablespoons dijon mustard
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 1/4 teaspoon crushed red pepper
