Ingredients:
- 1 (1 ½ lb.) package Baby Boomer Creamer potatoes, halved
- 1 tbsp unsalted butter, cut into pieces
- ¼ cup + 2 tbsp skim milk
- ¼ tsp salt
- ¼ tsp ground pepper
- 1 tsp olive oil
- 1 large shallot, minced
- 3 cups (packed) chopped kale
- 2 tbsp water
- 1 oz. crumbled chevre (goat cheese)
