Ingredients:

The pesto:
  • 2 roasted bell pepper, chopped (see How to: Roast a Bell Pepper)
  • 3 tbsp raw, unsalted cashews
  • 1 garlic clove, chopped
  • ¼ cup chopped flat-leaf parsley
  • 3 tbsp grated Parmesan cheese
  • ¼ tsp salt
  • ¼ tsp ground pepper
  • ¼ cup extra virgin olive oil
The potatoes:
  • 1 ½ lb. Terrific Trio (or other Little Potato Company creamer varietals) potatoes
  • Minced flat-leaf parsley, for garnish
