Ingredients:
The pesto:
- 2 roasted bell pepper, chopped (see How to: Roast a Bell Pepper)
- 3 tbsp raw, unsalted cashews
- 1 garlic clove, chopped
- ¼ cup chopped flat-leaf parsley
- 3 tbsp grated Parmesan cheese
- ¼ tsp salt
- ¼ tsp ground pepper
- ¼ cup extra virgin olive oil
- 1 ½ lb. Terrific Trio (or other Little Potato Company creamer varietals) potatoes
- Minced flat-leaf parsley, for garnish
