Ingredients:
- 3 tsp olive oil, divided
- 2 boneless, skinless chicken breasts, cut into ¾ –inch pieces
- ¼ tsp salt
- ¼ tsp ground pepper
- ½ yellow onion, chopped
- 3 carrots, cut into half-circles
- 3 cloves garlic, minced
- ¾ tsp ground oregano
- ½ tsp red pepper flakes
- 1 (28 oz.) can crushed tomatoes
- 5 ¼ cups low sodium chicken broth
- ⅔ cup whole wheat orzo
- 1 (14 oz.) can low-sodium garbanzo beans (chickpeas)
- ¼ cup minced flat-leaf parsley
