Light Salmon & Potato Chowder Recipe

Ingredients:
- 1 tsp olive oil
- 1 medium onion, chopped
- 1 celery stalk, diced
- ½ red bell pepper, diced
- 3 cloves garlic, minced
- 2 tbsp chopped fresh thyme
- ½ tsp red pepper flakes
- ½ lb. Blushing Belle (or other Little Potato creamer varietals) potatoes
- 2¾ cup vegetable broth
- ¾ cup frozen corn
- ¼ cup all-purpose flour
- 2 ½ cups 2% milk
- ¾ tsp salt
- ½ tsp ground pepper
- 1 ¼ lb. salmon, cut into 1-inch pieces
- ¼ cup minced flat-leaf parsley
- Salt and pepper, to taste
