Seared Scallops with Wilted Greens

  • 2 shallots, sliced thin

  • 2 bunches of kale (chard, beet greens…)

  • 1 tablespoon Red wine vinegar
  • Salt and pepper
  • 12 jumbo sea scallops
  • 1 tablespoon olive oil
